Ecology Center Farm Kit and Cook-a-long

Do you have an elementary or middle school student who wants to cook or learn more about local farming? SunCoast Market Co-op is offering an online and family-friendly workshop with chef, Christina Ng.  She will show you how to prepare The Ecology Center Winter Farm Kit recipe and teach you and your children basic knife and cooking skills.

The Field Kit from The Ecology Center in San Juan Capistrano is great for little ones to celebrate and learn about the fall season! The Field Kit includes everything you need to make a wonderful bean and butternut squash soup with kale and toasted bread. The kit is paired with an immersive take-home learning guide. Field Kit is your opportunity to engage deeply in ecological agriculture and real food with your children.

Didn’t grab a box? That’s okay, here’s what you’ll need:

• 1 large or 3 small Butternut Squash
• Cranberry Beans (any white bean or pinto beans work too)
• 1 bunch Kale
• 2 Yellow Onions
• Crusty Bread Loaf
• 4-6 cloves of Garlic
• Optional: broth, leftover herbs or carrots (for flavoring and cooking dried beans)

Be sure to soak and cook dried beans before class if you want to cook a long!
